The add-ons that I use are:
DBM
GTFO nice to distinguish friendly fire from hostile
Altoholic - saves me time searchign for who has what
recount - to see how bad my dps is _ LOL
Omen3 - when I tank to see who is grabbing more threat then me
Dugi Questing Essential - automatically recommends equipping any gear that will be an upgrade when I quest and also when I change specs
Healium- for healing
Healers have to die - for pvp
Autionator - for AH buying and selling
Handy Notes is a treasure locator which recently added legion treasures . icons for treasures appear on your map
I used to have many addons back when I customized my UI heavily, but coming back after a year I just use the standard UI and a few addons that Carwyn already touched on.
BUT one addon I cannot live without is Bagnon - combines all of your bags into one!
I use many of the same as Carwyn.
I currently use recount as my dps meter, however if you have a slower computer I heard Skada is much less memory intensive so it might be a better choice. I am probably going to switch over when I get around to it, I think Skada also has a built in threat meter.
The other one I really love is Tidy Plates, which lets you further customize name plates. In my opinion this is one of the most useful addons out there.
ElvUi is the best UI replacement.
In addition to that I embed Skada and Omen. I don't use Recount anymore since I am not progression raiding, though if you dig into the reports there is a ton of information regarding your output per spell and so forth. However, I get that information from AskMrRobot these days. With a $12 a year subscription you can track all dungeon and raid logs for your character, plus get BiS recommendations.
I also recommend Decursive, GTFO, DBM and Mik's Scrolling battle text.

ElvUI scares me.
ElvUI does look scary.
For healing, I use Healium. I tried Healbot, but it just didn't work for me. How does VudDo work?
I have been using DBM and GTFO for awhile and I love them. It's nice to know who is throwing what at me. Altoholic has been a life saver for a very long time as I am a bit of an altoholic myself. Recount I have had for awhile, though it was mostly because I had it years ago and not for any other real reason. I used to use Auctioneer, but since that doesn't work anymore, I am using Auctionator now. I like knowing what is a good price for my stuffs.
Handy Notes sounds like a good one to have, I'll have to try that. I don't tank, so I don't think I'll grab Omen. I also don't PVP, so healers can live. :D
I grabbed Dugi Questing Essential. That one is going to take some getting used to.
Okay, ElvUI officially scares me too. I have used it on and off, but last night when portaling into Dalaran it suddenly decided all my UI needed to be HUGE. Almost my entire screen was filled with UI, and there was a tiny hole in the middle I could see where I was going.
I uninstalled and spent 20 minutes reconfiguring the default UI.
On launch day.
*sigh*
So here's my "must have" list:
DBM
GTFO
Omen (when I tank. When I DPS it goes off some but that's the tanks problem :P )
Decursive
Skada (or Recount)
Battlepets (because I am waaayyy into battlepets)
Coordinates (because sometimes you just need them to find something)
VuhDo if I heal (replaces Decursive if I use this) Probably on par with Healbot, but my last raid team used it and all the healers were on the same page)
That's all for now. I remember being way into Titan Panels before my Cata break. It was nice to have the bar showing all the info for alts and such. Not sure if that is still out there.
I use the classic CTMod. Its a little buggy and not updated as often as I would like but it keeps with the traditional WOW UI and I like that.
I have used ElvUI and its okay. The learning curve is step though. Thanks for the guide, I may revisit it soon.
