Portuguese Tomato Rice with Sausage

1/8 cup olive oil

1 tablespoon butter

1/2 large yellow onion, chopped

2 garlic cloves, minced

1-2 large tomato peeled, chopped and seeded (can also used canned tomatoes)

2 cups liquid (I use 1 cup water and 1 cup tomato sauce because I love "tomatoey" things; but the traditional recipe calls for 2 cups chicken or beef broth)

1 cup long-grain rice

salt and pepper

Optional:  Sausage (Any sausage you like.  I'm not a big meat eater, so typically add about 1/2 kielbasa sausage ring that I browned in olive oil.  For healthier fare, use a turkey sausage)

 

DIRECTIONS

1) Heat oilive oil and butter in saucepan until butter is melted

2) Add onion and garlic and sauté until onion is soft

3) Add chopped tomatoes, cover and simmer for 15 minutes

4) Add broth (or water/tomato sauce), then add rice, cover and simmer for about 20 minutes.

Optional:  Add the cooked sausage to the pot when the rice is added

5) Salt and pepper to taste

 

This is a great one pot meal that was taught to me by a gamer friend from Portugal.  Comfort food!

I actually just made this tonight lol. It is very similar to a dish called Jambalaya but I use these ingredients instead. I add a red onion and tex mex to mine.

That sounds like a good addition Ysolde.  I will also add some Mexican spicing which my Portuguese friend though was strange. (He was always flabbergasted to learn that tomato-rice wasn't a staple on American menus.)  I think it gives more "interest" to the dish.  :)

I only originally started adding tex mex to mine cause I could not find any cajun seasoning which the recipe called for.

I just noticed now I typed red onion and I meant to say red pepper lol. Mustve had onions on the brain. Of course I do add an onion as well lol

Tried this. Used Chicken Sausage with Artichoke and Mozzarella.  It rocked!

Glad you like it Thrill.  :)  Dressing it up a little with a artisan sausage is a great way to step up a notch.
