Note that when I make these I usually double the cookie recipe and triple the Frosting. If you are making a single batch of cookies multiply the frosting by 1.5 otherwise you will not have enough to cover all your cookies.
1 cup Shortening
1 Cup White Sugar
1 Egg
1 cup Pumpkin
2 tsp vanilla
2 cup Flower
1 tsp baking powder
1 tsp soda
2 tsp cinnamon
1/2 tsp salt
(you can also add a touch of nutmeg to add a little flavor... don't
overdo it and don't try this the first time.)
mix all dry ingredients then stir in Egg, vanilla, and Pumpkin mix
on low for about 90 seconds. bake at 350 for 10 to 12 minutes cookies
should be moist but toothpick should come out clean. if you bake too
long they get REALLY dry then you have hockey pucks. each cookie
should be 1 heaping teaspoon of batter.
important: Allow cookies to cool completely before frosting.
Maple Frosting:
1 Cup Brown Sugar
3 tablespoons Margarine
4 tablespoons Milk
1 cup confectioners Sugar
1 tsp vanilla
Boil first 3 Ingredients for 2 min (Stir this constantly or it WILL burn very badly)
cool mixture* (about 10 minutes works for me but due to elevation and room temperature exact times may very)
Add last two ingredients and Frost cookies.
*As the frosting cools it will set into the thick maple "fudge like" consistency. It should still be very warm when spread on the cookies. If the frosting is too cold it will be very hard to spread. Avoid the temptation to reheat the frosting instead add a tablespoon of milk.
